- Pre-Heat the oven to 350 degrees Fahrenheit
- In an oven-safe container (preferably glass) combine flaxseed meal, nut of choice, and shredded coconut. Bake this combination for about 10 minutes.
- After which time, add the chia seeds as well as the cranberries and bake for another 10 minutes. If you choice to include the goji berries or mulberries, I would recommend including these in this step as well.
- In a microwave-safe container, heat the jar of chosen nut butter for approximately 30 seconds (apply caution as not to burn the nut butter; it should be liquified not clumpy).
- Place the baked combination, which should be slightly cooled at this point, into a large mixing bowl. Then add the nut butter and honey, mix thoroughly to insure that no loose baked ingredients remain. Let sit for roughly 5 minutes before molding the complete mixture into balls; the size of these are a personal choice, but I found that the bigger they are the better they mold.
- Place the formed balls onto a cookie sheet(s) (if you're utilizing waste - aluminum foil would help), then freeze on the cookie sheet(s) over night.
- Move to a air-tight container the next day. I recommend keeping them in the freezer, only removing the portion-size that you'd like.
